I wanted to share a recipe with you this week but didn’t have a chance to photograph it. Why? I served it on the platter, literally turned my back and one slice was gone. 4 minutes later the whole cake disappeared!
Well, I’m sharing it with you anyway for Wacky Wednesday but also as a Throwback Thursday recipe.
The brief was to prepare a gluten free, sugar free, low salicylate cake that would cover all the allergy problems for a farewell morning tea. My newest obsession is this Queen vanilla bean grinder but you can substitute a teaspoon of pure vanilla if you wish. I just like the reassurance it is pure vanilla bean, that it’s in a grinder, tastes fantastic, and you can see the pretty vanilla flakes in the cake.

This will be made again so just pretend that it’s presented beautifully with a sprinkling of Natvia icing mix on top as “icing sugar”. When I said I would make it again I got an instant reply of “good!”. I literally turned around and it was gone so I know you will love this too!
GF SF Pear and Vanilla Wacky Cake ~ (serves 9-12)
1 & ½ cups gluten free all-purpose flour
1 c Natvia
1 tsp salt
1 tsp baking soda
Ground Vanilla Beans or 1 tsp pure vanilla
4 Tbls homemade pear sauce*
2 Tbls margarine, melted
1 Tbls white vinegar
1 cup cold water
1 ripe pear peeled and sliced
*I made my own pear sauce just by peeling pears and adding some water in a microwave safe container. I microwaved for about 5 minutes and then used my emersion blender to make perfect pear sauce to replace the applesauce in the original recipe.

Preheat oven to 180° or 160° fan forced and spray a 20cm square pan with cooking spray.
In a medium mixing bowl, mix all the dry ingredients together by hand.

Add all the wet ingredients until well combined.

Pour into the pan and arrange the pear slices on top.

Bake for 30 minutes or until a skewer comes out clean.

Allow to cool and serve with a dusting of Natvia Icing Mix on top.* (pretend this looks pretty with a dusting of white on top and is presented beautifully!)

*top tip, if you mix 1 cup of Natvia Icing Mix or Icing Sugar with a teaspoon or a bit more of Cornflour it won’t disappear into the cake
