Mid Week Makeover ~ Grandad’s Mince Cream Gravy!

Remember when I made chipped beef and my family thought it was SOOO good?

I wasn’t eating meat then but when we started talking about comfort foods I immediately thought of a quick mid week menu of mince gravy (or hamburger gravy as we would have called it in the US). Cream gravy always makes me think of road trips with my Grandad and 2 cousins and french fries and cream gravy in Reno, Nevada! We certainly covered some miles in his convertible Cougar and those memories are cherished in my heart and mind.

Just so you know, my Grandad did not make this for us. He was more of a Webber man and impossible French toast man that left the kitchen with jam splatters on the ceilings sometimes. I’ll have to do that one for you one day but you’ll have to hold onto your hats for that one!

But back to mid week business, please. This is a QUICK and easy recipe using humble mince that you can have on the table in 30 minutes or less. Serve it over thick sliced toast or rice along with veggies and you have a hearty meal that even leaves enough to make over the mid week makeover into a pie next week  :)

Grandad’s Mince Cream Gravy ~ Serves 6-8
1 kilo lean mince
½ onion chopped (or onion flakes 1 tsp)
5 x cups skim milk
1 x Tbls chicken stock powder
2 x Tbls butter or margarine
½ cup gluten free all purpose flour
Salt & pepper to taste

In a large skillet or dutch oven, cook the mince until evenly browned.

Drain off most of the grease, if any, but leave enough to coat the bottom of the pan. Add the onions or onion flakes and cook for a few minutes.

Pour 4 x cups of milk into the pan and stir with a wooden spoon, especially on the bottom of the pan to prevent burning.

Bring to the boil and cook for 5 minutes stirring frequently.

Mix in the butter or margarine and stock powder.

Mix the flour into the remaining cup of milk until smooth. Pour this into the pan while stirring continuously.

Simmer for a few minutes until it thickens and season with salt and pepper.

PS – I am deferring not cancelling today’s house challenge of SHOES. Not because it’s shoes but I was just too busy tonight with food prep and now have to make treats for ballet tomorrow. I do solemnly swear I will purge and organise my shoes this weekend Image may be NSFW.
